- 4 chicken breasts
- 1 cup flour
- 2 eggs, beaten
- 2 cups breadcrumbs
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup heavy cream
- 2 tablespoons sriracha sauce
- 1 tablespoon garlic, minced
- 2 cups jasmine rice
- 4 cups chicken broth
- Chopped green onions for garnish
Instructions
- Cook the jasmine rice: In a pot, bring the chicken broth to a boil. Add the rice, reduce to a simmer, cover, and cook for 15 minutes.
- Prepare the chicken: Season the chicken breasts with salt and pepper. Dredge each piece in flour, dip in the beaten eggs, and then coat with breadcrumbs.
- Fry the chicken: In a large skillet, heat olive oil over medium heat. Cook the chicken until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken and let it cool.
- Make the sauce: In the same skillet, add the minced garlic and sauté for about a minute. Pour in the heavy cream and sriracha sauce, stirring to combine. Let it simmer for 3-5 minutes until it thickens.
- Serve: Slice the crispy chicken and place it over a bed of jasmine rice. Drizzle with the creamy spicy sauce and garnish with chopped green onions.
Notes
Store leftovers in the fridge for 3-4 days or freeze for 2-3 months. Reheat in the oven for the best texture.
