Ingredients

- 2 medium sweet potatoes
- 1 cup red lentils
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons flour (or gluten-free flour)
- Oil for frying
- 1 avocado
- 1/4 cup fresh cilantro
- 2 tablespoons lime juice
- Salt to taste
Instructions
- Peel and cube the sweet potatoes. Boil them in water until they’re tender, then drain and mash.
- Rinse the red lentils and cook them in a separate pot until soft, about 15-20 minutes.
- Combine the mashed sweet potatoes, cooked lentils, chopped onion, minced garlic, cumin, salt, pepper, and flour in a large bowl. Mix until well combined.
- Shape the mixture into patties, making them as big or small as you like.
- Heat oil in a skillet over medium heat. Fry the patties until golden brown on both sides, about 3-4 minutes per side.
- Blend the avocado, cilantro, lime juice, and salt until smooth to make the sauce.
- Serve the patties warm with the avocado sauce drizzled on top or on the side for dipping.
Notes
Let the patties rest for 10-15 minutes before frying to help them hold their shape. Adjust seasonings to taste.
