Description

Delightful crispy patties made with sweet potatoes and red lentils, perfect for family meals and gatherings.


Ingredients

  • 2 medium sweet potatoes
  • 1 cup red lentils
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons flour (or gluten-free flour)
  • Oil for frying
  • 1 avocado
  • 1/4 cup fresh cilantro
  • 2 tablespoons lime juice
  • Salt to taste

Instructions

  1. Peel and cube the sweet potatoes. Boil them in water until they’re tender, then drain and mash.
  2. Rinse the red lentils and cook them in a separate pot until soft, about 15-20 minutes.
  3. Combine the mashed sweet potatoes, cooked lentils, chopped onion, minced garlic, cumin, salt, pepper, and flour in a large bowl. Mix until well combined.
  4. Shape the mixture into patties, making them as big or small as you like.
  5. Heat oil in a skillet over medium heat. Fry the patties until golden brown on both sides, about 3-4 minutes per side.
  6. Blend the avocado, cilantro, lime juice, and salt until smooth to make the sauce.
  7. Serve the patties warm with the avocado sauce drizzled on top or on the side for dipping.

Notes

Let the patties rest for 10-15 minutes before frying to help them hold their shape. Adjust seasonings to taste.
