- 2 pounds boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) corn, drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup beer (optional)
- 4 cups chicken broth
- 1/2 cup heavy cream (optional)
- Toppings: shredded cheese, sour cream, cilantro
Instructions
- Place the chicken breasts at the bottom of the crockpot in a single layer.
- Add the white beans, corn, chopped onion, minced garlic, and diced green chilies on top of the chicken.
- Sprinkle the ground cumin, chili powder, salt, and black pepper over the ingredients.
- If using, pour in the beer, then add the chicken broth. Stir gently to combine without disturbing the chicken too much.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken in the crockpot using two forks.
- If desired, stir in the heavy cream for a creamier texture.
- Ladle the chili into bowls and top with your favorite toppings like cheese, sour cream, or cilantro.
Notes
Store in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months. Reheat thoroughly before serving.
