Delicious Chicken Enchiladas with Sour Cream White Sauce – creamy, flavorful, and perfect for weeknight dinners.
Ingredients
2 cups shredded cooked chicken
1 tbsp olive oil
1 tbsp butter
2 tbsp flour
1 cup chicken broth
1 cup sour cream
1 can diced green chilies
2 cups shredded cheese
8 flour tortillas
1 tsp cumin
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and pepper to taste
Instructions
1. Preheat oven to 350°F (175°C).
2. Season and cook chicken until done, then shred.
3. Prepare sauce: melt butter, whisk flour, add broth, sour cream, chilies, and spices.
4. Fill tortillas with shredded chicken and cheese.
5. Place in baking dish and cover with sauce.
6. Top with cheese and bake 25 minutes until bubbly.
Notes
You can substitute chicken breasts with thighs for juicier results.
Add extra chilies for more heat.
Leftovers can be refrigerated up to 3 days.
