Description

Ingredients

2 cups graham cracker crumbs (about 1416 crackers, finely crushed)

1 cup sweetened shredded coconut

1/2 cup creamy peanut butter

1/4 cup unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

Pinch of salt

2 cups semi-sweet chocolate chips

2 tablespoons coconut oil (for smooth chocolate coating)

Optional: sprinkles, crushed nuts, or sea salt for topping


Instructions

1. Combine graham cracker crumbs, shredded coconut, and powdered sugar in a large mixing bowl.

2. Melt peanut butter and butter together in microwave for 30-45 seconds until smooth, then stir in vanilla extract and salt.

3. Pour the peanut butter mixture over dry ingredients and mix thoroughly until everything holds together when pressed (about 2-3 minutes).

4. Using a small cookie scoop or spoon, roll mixture into 1-inch balls and place on parchment-lined baking sheet. Refrigerate for 20-30 minutes until firm.

5. Melt chocolate chips with coconut oil in 30-second microwave intervals, stirring between each, until completely smooth (90-120 seconds total).

6. Remove chilled balls from refrigerator. Using a fork, dip each ball into melted chocolate, coating completely, and return to parchment paper.

7. Add optional toppings immediately before chocolate sets.

8. Refrigerate coated balls for 15-20 minutes until chocolate is firm. Serve chilled or at cool room temperature.

Notes

Store in airtight container in refrigerator for up to 2 weeks, layering between parchment paper.

Freeze uncoated balls for up to 3 months, or coated balls for up to 2 months.

For nut-free version, substitute sunflower seed butter or soy nut butter for peanut butter.

Use gluten-free graham crackers to make this recipe gluten-free.

If mixture is too dry, add softened butter 1 teaspoon at a time. If too wet, add more graham cracker crumbs.

Dark chocolate or white chocolate can be substituted for semi-sweet chocolate chips.
