1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh chives, finely chopped (optional)

4 large flour tortillas (1012 inch burrito size)

2 cups fresh spinach or romaine lettuce, washed and dried

1 large red bell pepper, julienned into thin strips

1 large yellow or orange bell pepper, julienned

1 English cucumber, seeded and julienned

1 large carrot, shredded or julienned

1 ripe avocado, thinly sliced

1/4 red onion, very thinly sliced

46 radishes, thinly sliced (optional)

1/2 cup shredded cheese (cheddar, mozzarella, or pepper jack)

Extra virgin olive oil for drizzling

Red wine vinegar or balsamic vinegar

Everything bagel seasoning or Italian seasoning

Sea salt and freshly cracked black pepper


Instructions

1. In a medium bowl, combine softened cream cheese, sour cream, and lemon juice. Mix in garlic powder, dill, onion powder, salt, and pepper until smooth. Fold in chives if using. Refrigerate for 15 minutes.

2. Wash all vegetables thoroughly and pat completely dry with paper towels or use a salad spinner for greens. This step is crucial to prevent soggy roll-ups.

3. Julienne bell peppers, cucumber (seeds removed), and carrots into thin, uniform matchstick strips. Thinly slice radishes and red onion. Slice avocado just before assembling.

4. Lay one tortilla flat on a clean work surface. Spread about 1/4 cup of the cream cheese mixture evenly over the entire tortilla, leaving a 1/2-inch border around the edges.

5. Place a layer of spinach or romaine lettuce over the cream cheese, covering about 3/4 of the tortilla and leaving the far edge bare.

8. Starting from the edge closest to you, fold the tortilla over the vegetables and tuck in the filling. Continue rolling tightly away from you until completely rolled. The bare edge will seal the roll-up.

9. Wrap the completed roll-up tightly in plastic wrap, placing it seam-side down. Repeat with remaining tortillas and ingredients.

10. Refrigerate wrapped roll-ups for at least 1 hour or up to 24 hours to set and firm up.

11. When ready to serve, remove plastic wrap and trim both ends with a sharp knife. Slice into 1-inch thick pinwheels (6-8 pieces per roll-up), wiping the knife clean between cuts.
