Ingredients

  • 1 pound diced chicken breast
  • 2 cups fresh spinach
  • 8 ounces sliced mushrooms
  • 1 cup heavy cream
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces cooked pasta (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your ingredients: dice the chicken into bite-sized pieces, slice the mushrooms, and rinse the fresh spinach.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, toss in the diced chicken. Season it with salt, pepper, garlic powder, and onion powder. Sauté for about 5-7 minutes, stirring occasionally, until the chicken is lightly browned and cooked through.
  4. Add the sliced mushrooms to the skillet and cook for an additional 3-4 minutes until they begin to soften. Then, add in the fresh spinach and stir until it wilts down.
  5. Pour in the heavy cream and stir everything together. Let it simmer for about 3-5 minutes, allowing the sauce to thicken slightly.
  6. Transfer the entire chicken, vegetable, and sauce mixture into a greased baking dish. If using pasta, gently fold it in at this stage.
  7. Top everything with the remaining shredded cheese.
  8. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh herbs if desired, and serve warm!

Feel free to customize the cheese and add additional vegetables as desired.
