Delicious Vegetarian Lasagna

Description

A hearty and flavorful vegetarian lasagna made with layers of pasta, ricotta, and vegetables.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 jar (24 oz) marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a pan over medium heat, then add onion and garlic.
  4. Sauté until the onion is translucent.
  5. Add spinach, zucchini, and bell pepper, cooking until softened.
  6. Spread a layer of marinara sauce in a baking dish.
  7. Layer three lasagna noodles, half of the ricotta cheese, half of the vegetable mixture, and a third of the mozzarella cheese.
  8. Repeat the layers once more, finishing with noodles and remaining sauce.
  9. Top with remaining mozzarella and Parmesan cheese.
  10. Bake covered with foil for 30 minutes, then uncover and bake for another 15 minutes, until golden.
  11. Let cool for 10 minutes before slicing and serving.

Notes

For added flavor, sprinkle fresh basil on top before serving.
