Description
A hearty and flavorful vegetarian lasagna made with layers of pasta, ricotta, and vegetables.
Ingredients

- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups spinach, chopped
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 jar (24 oz) marinara sauce
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a pan over medium heat, then add onion and garlic.
- Sauté until the onion is translucent.
- Add spinach, zucchini, and bell pepper, cooking until softened.
- Spread a layer of marinara sauce in a baking dish.
- Layer three lasagna noodles, half of the ricotta cheese, half of the vegetable mixture, and a third of the mozzarella cheese.
- Repeat the layers once more, finishing with noodles and remaining sauce.
- Top with remaining mozzarella and Parmesan cheese.
- Bake covered with foil for 30 minutes, then uncover and bake for another 15 minutes, until golden.
- Let cool for 10 minutes before slicing and serving.
Notes
For added flavor, sprinkle fresh basil on top before serving.
