- 2 pounds Fresh Strawberries
- 1 box (about 9 sheets) Graham Crackers, crushed
- 1 cup (2 sticks) Unsalted Butter, melted
- 8 ounces Cream Cheese, softened
- 14 ounces Sweetened Condensed Milk
- 2 tablespoons Lemon Juice
- 1 teaspoon Vanilla Extract
- 1/2 cup Granulated Sugar
- Easter Sprinkles (Optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Wash, hull, and slice the strawberries. Place in the baking dish and sprinkle with granulated sugar.
- In a large bowl, combine softened cream cheese, sweetened condensed milk, lemon juice, and vanilla extract. Beat until smooth.
- Pour the cheesecake mixture over the strawberries evenly.
- In a separate bowl, crush the graham crackers into fine crumbs.
- Sprinkle the graham cracker crumbs evenly over the cheesecake layer.
- Melt the unsalted butter and drizzle it over the graham cracker crumbs.
- Bake for 45-50 minutes, until golden brown and set.
- Cool completely in the baking dish on a wire rack.
- Chill in the refrigerator for at least 2-3 hours before serving.
- Cut into squares, garnish with fresh strawberries or whipped cream, and enjoy!
