- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup corn starch
- 1/2 cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 2 eggs, beaten
- 1 cup sweet and sour sauce
- 1 cup bell peppers, chopped
- 1 cup pineapple chunks
- 2 tbsp vegetable oil
Instructions
- Preheat your oven to 375°F (190°C).
- Mix corn starch, flour, salt, and pepper in a bowl.
- Dip chicken pieces in beaten eggs, then coat in the flour mixture.
- Heat vegetable oil in a pan and fry the chicken pieces until golden brown.
- Combine cooked chicken, bell peppers, pineapple, and sweet and sour sauce in a baking dish.
- Bake for 25-30 minutes, until chicken is cooked through and sauce is bubbly.
- Serve hot over rice.
Notes
For a pop of color, add sesame seeds on top before serving. Pairs well with steamed broccoli or mixed green salad.
