Description

A quick and delicious recipe for sweet and sour chicken that combines tender chicken, colorful bell peppers, and juicy pineapples in a delightful sauce, perfect for busy weeknights or family gatherings.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup corn starch
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 eggs, beaten
  • 1 cup sweet and sour sauce
  • 1 cup bell peppers, chopped
  • 1 cup pineapple chunks
  • 2 tbsp vegetable oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix corn starch, flour, salt, and pepper in a bowl.
  3. Dip chicken pieces in beaten eggs, then coat in the flour mixture.
  4. Heat vegetable oil in a pan and fry the chicken pieces until golden brown.
  5. Combine cooked chicken, bell peppers, pineapple, and sweet and sour sauce in a baking dish.
  6. Bake for 25-30 minutes, until chicken is cooked through and sauce is bubbly.
  7. Serve hot over rice.

Notes

For a pop of color, add sesame seeds on top before serving. Pairs well with steamed broccoli or mixed green salad.
