- 1 lb chicken (thighs or breasts)
- 2 cups rice
- 4 cups chicken broth
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 bell pepper (chopped)
- 1 can diced tomatoes
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the chopped onion, minced garlic, and chopped bell pepper.
- Toss in the chicken pieces and cook until browned on all sides.
- Stir in the rice, diced tomatoes, chicken broth, cumin, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover and let it simmer for about 20-25 minutes or until the rice is perfectly cooked.
- Once cooked, fluff with a fork and garnish with fresh cilantro.
