Ingredients

  • 1 lb chicken (thighs or breasts)
  • 2 cups rice
  • 4 cups chicken broth
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion, minced garlic, and chopped bell pepper.
  3. Toss in the chicken pieces and cook until browned on all sides.
  4. Stir in the rice, diced tomatoes, chicken broth, cumin, paprika, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low.
  6. Cover and let it simmer for about 20-25 minutes or until the rice is perfectly cooked.
  7. Once cooked, fluff with a fork and garnish with fresh cilantro.
