A hearty and flavorful vegetable lasagna packed with layers of fresh veggies, cheese, and marinara sauce.
Ingredients

- 9 lasagna noodles
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup spinach
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat and sauté garlic, zucchini, and bell pepper until tender.
- Add spinach, Italian seasoning, salt, and pepper; cook until spinach is wilted.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, followed by half of the ricotta cheese and half of the vegetable mixture.
- Top with a layer of mozzarella and a sprinkle of Parmesan cheese.
- Repeat the layering process, finishing with marinara sauce and remaining cheeses on top.
- Bake for 30 minutes until cheese is bubbly and golden.
- Let cool for a few minutes, slice, and serve.
Notes
Feel free to add your favorite vegetables or herbs for extra flavor.
