Description

A hearty and flavorful vegetable lasagna packed with layers of fresh veggies, cheese, and marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat and sauté garlic, zucchini, and bell pepper until tender.
  3. Add spinach, Italian seasoning, salt, and pepper; cook until spinach is wilted.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta cheese and half of the vegetable mixture.
  6. Top with a layer of mozzarella and a sprinkle of Parmesan cheese.
  7. Repeat the layering process, finishing with marinara sauce and remaining cheeses on top.
  8. Bake for 30 minutes until cheese is bubbly and golden.
  9. Let cool for a few minutes, slice, and serve.
