Easy Crockpot Chicken with Pumpkin and Sage

Description

A hearty and comforting dish blending savory chicken with the creamy sweetness of pumpkin, effortlessly cooked in a crockpot.


Ingredients

  • 1 pound Boneless, skinless chicken thighs
  • 1 cup Pumpkin puree
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 4 leaves Fresh sage leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cups Chicken broth
  • 1 cup Heavy cream or coconut milk
  • 2 tablespoons Olive oil

Instructions

  1. Start by heating the olive oil in a pan over medium heat. Add the chopped yellow onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes.
  2. While the onions and garlic sauté, pat the chicken thighs dry with a paper towel and season them with salt, black pepper, and dried thyme.
  3. Transfer the sautéed onions and garlic to the bottom of your crockpot. Place the seasoned chicken thighs on top.
  4. Pour in the pumpkin puree followed by the chicken broth. Make sure to spread it evenly.
  5. Add the fresh sage leaves on top for that aromatic flavor, too!
  6. Cover the crockpot and set it to low. Let it cook for about 360-420 minutes. If you’re pressed for time, you can set it to high for 180-240 minutes instead.
  7. Once the chicken is cooked and tender, take a couple of forks and shred it right in the pot.
  8. Stir in the heavy cream or coconut milk to enhance the creaminess and richness of the dish. Let it cook for an additional 15 minutes, allowing all those savory flavors to meld together beautifully.

Notes

Serve over rice or mashed potatoes, and pair with fresh bread. Leftovers can be stored for 3-4 days in the fridge or frozen for 2-3 months.
