- 4 chicken thighs
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 can coconut milk
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a pan over medium heat. Allow it to warm up for a minute or so.
- Add the chopped onion and minced garlic. Sauté them until they turn translucent, about 3-4 minutes.
- Stir in the curry powder and cook for a minute until fragrant.
- Add the chicken thighs. Season them with salt and pepper, and sear until they’re browned on both sides, about 4-5 minutes per side.
- Pour in the coconut milk, bringing the mixture to a simmer. Cover the pan and cook everything for 25-30 minutes, or until the chicken is cooked through and tender.
- Garnish with fresh cilantro before serving. Enjoy every bite!
