Ingredients

  • 4 chicken thighs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 can coconut milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a pan over medium heat. Allow it to warm up for a minute or so.
  2. Add the chopped onion and minced garlic. Sauté them until they turn translucent, about 3-4 minutes.
  3. Stir in the curry powder and cook for a minute until fragrant.
  4. Add the chicken thighs. Season them with salt and pepper, and sear until they’re browned on both sides, about 4-5 minutes per side.
  5. Pour in the coconut milk, bringing the mixture to a simmer. Cover the pan and cook everything for 25-30 minutes, or until the chicken is cooked through and tender.
  6. Garnish with fresh cilantro before serving. Enjoy every bite!
