Description

Delightful and easy-to-make lemon bars with a buttery crust and a tangy lemon filling, perfect for any occasion.


Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.75 cup unsalted butter (cold and cut into pieces)
  • 1 cup granulated sugar
  • 3 large eggs
  • 0.25 cup fresh lemon juice (about 2 lemons)
  • 2 teaspoons lemon zest
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by combining the all-purpose flour and powdered sugar in a mixing bowl.
  3. Cut the cold butter into the dry ingredients until crumbly.
  4. Press the mixture into the bottom of a greased 9×13-inch baking dish.
  5. Bake the crust for about 15 minutes or until lightly golden.
  6. Prepare the filling by whisking together the granulated sugar, eggs, fresh lemon juice, lemon zest, baking powder, and salt until smooth.
  7. Pour the lemon filling over the crust once it’s out of the oven.
  8. Bake for another 20 minutes.
  9. Cool the bars on a wire rack before cutting them into squares.

Notes

Serve chilled with whipped cream or vanilla ice cream; also pairs well with fresh berries.
