Ingredients

- 1.5 cups all-purpose flour
- 0.5 cup powdered sugar
- 0.75 cup unsalted butter (cold and cut into pieces)
- 1 cup granulated sugar
- 3 large eggs
- 0.25 cup fresh lemon juice (about 2 lemons)
- 2 teaspoons lemon zest
- 0.5 teaspoon baking powder
- 0.25 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by combining the all-purpose flour and powdered sugar in a mixing bowl.
- Cut the cold butter into the dry ingredients until crumbly.
- Press the mixture into the bottom of a greased 9×13-inch baking dish.
- Bake the crust for about 15 minutes or until lightly golden.
- Prepare the filling by whisking together the granulated sugar, eggs, fresh lemon juice, lemon zest, baking powder, and salt until smooth.
- Pour the lemon filling over the crust once it’s out of the oven.
- Bake for another 20 minutes.
- Cool the bars on a wire rack before cutting them into squares.
Notes
Serve chilled with whipped cream or vanilla ice cream; also pairs well with fresh berries.
