Ingredients

  • 1 cup lemon juice
  • 1 cup sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, whisk together lemon juice, sugar, eggs, and cornstarch. Cook over medium heat until thickened, stirring occasionally, about 10 minutes.
  3. Remove from heat and stir in the vanilla extract and lemon zest.
