- 1 pre-made graham cracker crust
- 1 cup lemon juice
- 1 cup sugar
- 1 cup heavy cream
- 3 large eggs
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, whisk together lemon juice, sugar, eggs, and cornstarch. Cook over medium heat until thickened, stirring occasionally, about 10 minutes.
- Remove from heat and stir in the vanilla extract and lemon zest.
- Pour the lemon filling into the graham cracker crust.
- Bake for 10 minutes, then allow to cool completely.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Spread whipped cream over the cooled pie.
- Chill in the refrigerator for at least 2 hours before serving.
