- 4 medium Fresh zucchini
- 2 tablespoons Olive oil (Extra virgin recommended)
- to taste Salt
- to taste Pepper
- 1 cup Grated Parmesan cheese
- 2 tablespoons Fresh herbs (thyme, parsley, or basil) (Chopped finely)
- 1 clove Garlic (Minced or pressed)
- 1.25 cups Heavy cream (Or half-and-half)
- 0.25 cups Breadcrumbs (Optional for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and slice the zucchini into thin slices, about 1/4 inch thick.
- Prepare the baking dish by drizzling olive oil to prevent sticking.
- Layer the zucchini slices in the dish, closely packed.
- Season with salt and pepper.
- Mix the heavy cream, minced garlic, grated Parmesan, and fresh herbs in a bowl.
- Pour the cream mixture over the zucchini layers.
- Top with breadcrumbs if using.
- Bake for about 25-30 minutes or until golden brown and bubbly.
- Cool for a few minutes before serving.
Notes
For a crispy topping, use breadcrumbs; optionally, add red pepper flakes for heat.
