Description

A heartwarming chicken soup infused with bright lemon flavors, perfect for cozy gatherings and cold evenings.


Ingredients

  • 1 whole chicken
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups chicken broth
  • 1 cup orzo or rice
  • 3 egg yolks
  • 1/4 cup lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the chicken, onion, carrots, celery, and chicken broth in a large pot. Bring to a boil over medium heat.
  2. Reduce the heat to a simmer and cook until the chicken is tender, about 25-30 minutes.
  3. Remove the chicken, shred the meat, and return it to the pot.
  4. Add the orzo or rice to the pot and cook until tender, around 8-10 minutes.
  5. Whisk the egg yolks and lemon juice together in a bowl.
  6. Temper the egg mixture by gradually adding hot broth while whisking constantly.
  7. Pour the tempered egg mixture back into the pot while stirring the soup.
  8. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

Let leftover soup cool completely before storing in an airtight container. Refrigerate for up to 3 days or freeze for up to 3 months.
