- 4 cups cooked and shredded chicken (rotisserie chicken works well!)
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus an additional ½ cup for topping)
- 2 cups mixed vegetables (optional but recommended)
- 1 small onion, finely chopped
- Salt and pepper to taste
- 1 cup crushed buttery crackers (like Ritz)
- ½ cup melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, half of the shredded cheddar cheese, mixed vegetables, and chopped onion. Add salt and pepper to taste. Mix everything together until well combined.
- Transfer this mixture into a greased 9×13-inch baking dish and spread it out evenly.
- In a separate bowl, combine the crushed crackers with the melted butter. Stir until everything mixes well.
- Sprinkle the buttery cracker mixture evenly over the casserole. Then, top it with the remaining half-cup of shredded cheddar cheese.
- Bake in the preheated oven for 30 to 45 minutes, or until the top is golden brown and bubbly.
- Let it cool for a few minutes before serving.
