- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup oats
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- Combine the cottage cheese, eggs, oats, baking powder, salt, and vanilla extract in a blender. Blend until smooth.
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Pour a small amount of batter onto the skillet. Cook until bubbles form on the surface, then flip.
- Cook for another 2-3 minutes until the pancakes are golden brown.
- Repeat with the remaining batter. Serve warm with your choice of toppings.
