Description

Warm, fluffy pancakes made with buttermilk and topped with fresh berries.


Ingredients

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Fresh berries (strawberries, blueberries, etc.)
  • Maple syrup (for serving)

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt until evenly mixed.
  2. Mix the buttermilk, egg, and melted butter until combined and smooth.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined; do not overmix to keep the pancakes fluffy.
  4. Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side—about 2-3 minutes per side.
  6. Serve the pancakes warm, topped with fresh berries and drizzled with maple syrup.

Notes

Don’t overmix the batter, check your leavening agents, and use medium heat for the best pancakes.
