Ingredients

- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- Fresh berries (strawberries, blueberries, etc.)
- Maple syrup (for serving)
Instructions
- Whisk together the flour, sugar, baking powder, baking soda, and salt until evenly mixed.
- Mix the buttermilk, egg, and melted butter until combined and smooth.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined; do not overmix to keep the pancakes fluffy.
- Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side—about 2-3 minutes per side.
- Serve the pancakes warm, topped with fresh berries and drizzled with maple syrup.
Notes
Don’t overmix the batter, check your leavening agents, and use medium heat for the best pancakes.
