Delicious and convenient breakfast burritos that are easy to make and can be frozen for quick meals all month long.
Ingredients

- 12 large eggs
- 1/2 cup milk
- 1 pound breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 12 (10-inch) flour tortillas
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Whisk together the eggs, milk, and a pinch of salt and pepper in a large mixing bowl until light and fluffy.
- Heat the vegetable oil in a non-stick skillet over medium heat. Pour in the egg mixture and stir occasionally, cooking until firm yet moist. Remove from heat and set aside to cool.
- Warm the flour tortillas on a skillet or in the microwave for a few seconds.
- Layer a portion of the scrambled eggs, crumbled breakfast sausage, and both cheeses on each tortilla.
- Fold in the sides of each tortilla, then roll from the bottom upwards to create a burrito.
- Wrap each burrito in plastic wrap, then in aluminum foil, sealing tightly.
- Store the wrapped burritos in a freezer-safe bag or container.
- To reheat, unwrap, place in a damp paper towel, and microwave on high for 1-2 minutes.
Notes
Don’t overcook the eggs, warm the tortillas before filling, and customize with your favorite ingredients.
