Description

Delicious and convenient breakfast burritos that are easy to make and can be frozen for quick meals all month long.


Ingredients

Scale
  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Whisk together the eggs, milk, and a pinch of salt and pepper in a large mixing bowl until light and fluffy.
  2. Heat the vegetable oil in a non-stick skillet over medium heat. Pour in the egg mixture and stir occasionally, cooking until firm yet moist. Remove from heat and set aside to cool.
  3. Warm the flour tortillas on a skillet or in the microwave for a few seconds.
  4. Layer a portion of the scrambled eggs, crumbled breakfast sausage, and both cheeses on each tortilla.
  5. Fold in the sides of each tortilla, then roll from the bottom upwards to create a burrito.
  6. Wrap each burrito in plastic wrap, then in aluminum foil, sealing tightly.
  7. Store the wrapped burritos in a freezer-safe bag or container.
  8. To reheat, unwrap, place in a damp paper towel, and microwave on high for 1-2 minutes.

Notes

Don’t overcook the eggs, warm the tortillas before filling, and customize with your favorite ingredients.
