Description

A quick and delicious stir fry made with fresh broccoli, canned chickpeas, and garlic, perfect for busy weeknights.


Ingredients

  • 2 cups fresh broccoli florets
  • 1 can (15 oz) canned chickpeas, drained
  • 3 cloves fresh garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 tablespoons sesame seeds
  • 2 cups cooked white rice

Instructions

  1. Cut the broccoli into bite-sized florets.
  2. Drain the canned chickpeas thoroughly, and set them aside.
  3. Mince the fresh garlic cloves finely.
  4. Heat about two tablespoons of vegetable oil in a large wok or skillet over medium-high heat.
  5. Add the minced garlic to the hot oil, and stir-fry for roughly 30 seconds.
  6. Toss in the broccoli florets and stir-fry for about 3-4 minutes until bright green and tender-crisp.
  7. Add the drained chickpeas and continue to stir-fry for an additional 2-3 minutes.
  8. Pour soy sauce and sesame oil over the mixture and cook for one more minute.
  9. Serve the stir fry hot over cooked white rice and sprinkle with sesame seeds before indulging.

Notes

For extra flavor, consider adding a squeeze of lime or topped with sliced green onions.
