Description
These garlic butter beef bites feature tender sirloin cubes seared to perfection and tossed in aromatic garlic herb butter, served alongside crispy golden baby potatoes. Everything cooks in one skillet in just 25 minutes for an easy weeknight dinner that tastes restaurant-quality.
Ingredients
1½ pounds sirloin steak, cut into 1-inch cubes
1½ pounds baby potatoes, halved
2 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
1 teaspoon smoked paprika
2 tablespoons olive oil
4 tablespoons unsalted butter
6 garlic cloves, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme leaves
½ teaspoon red pepper flakes (optional)
1 tablespoon lemon juice
Fresh parsley for garnish
Instructions
1. Remove beef from refrigerator 20 minutes before cooking. Pat completely dry with paper towels.
2. Cut beef into uniform 1-inch cubes, removing large fat pieces.
3. Season beef with 1 teaspoon salt, ½ teaspoon pepper, and smoked paprika. Let sit.
4. Halve baby potatoes, pat dry, and season with remaining 1 teaspoon salt and ½ teaspoon pepper.
5. Heat 2 tablespoons olive oil in large cast-iron skillet over medium-high heat.
6. Add potatoes cut-side down in single layer. Cook undisturbed 6-7 minutes until golden brown.
7. Flip potatoes and cook another 5-6 minutes until tender. Transfer to plate and tent with foil.
8. Increase heat to high and let pan get very hot for 2 minutes.
9. Add beef cubes in single layer without overcrowding. Sear 2 minutes without moving.
10. Flip beef and sear another 2 minutes for medium-rare (4 minutes total).
11. Reduce heat to medium and add butter pieces.
12. As butter melts, add garlic, thyme, and red pepper flakes. Stir constantly 30-45 seconds.
13. Add lemon juice and swirl to create sauce.
14. Return potatoes to pan, toss in garlic butter, and garnish with parsley.
15. Serve immediately.
Notes
Pat beef completely dry before cooking for proper sear.
Don’t overcrowd pan—cook beef in batches if necessary.
For medium-rare: 130°F internal temperature (4 minutes cook time).
Add garlic only after reducing heat to prevent burning.
Use cast-iron skillet for best heat retention and sear.
Store leftovers separately up to 3 days, reheat gently in skillet with butter.
Can add mushrooms, bell peppers, or asparagus for variety.
