Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the steak bites in a single layer and sear for 1-2 minutes on each side until golden brown.
  4. Remove the steak from the skillet and set aside.
  5. Add butter to the skillet, melt, then add minced garlic and cook for about 30 seconds.
  6. Add the zucchini and cook for 3-5 minutes until tender-crisp.
  7. Return the steak bites to the skillet, toss to coat, and cook for another 1-2 minutes until heated through.
  8. Garnish with parsley if desired and serve immediately.
