  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice
  • Creamy mashed potatoes (for serving)
  • Rich pan sauce (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Season the chicken breasts with salt and pepper, then add them to the skillet and cook until browned on both sides, about 5 minutes per side.
  4. Add the minced garlic, rosemary, and thyme to the skillet and sauté for another minute until fragrant.
  5. Mix the chicken broth, honey, and lemon juice in a small bowl, then pour this mixture over the chicken.
  6. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
