- 4 cloves garlic, minced
- 2 tablespoons olive oil

- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 4 carrots, sliced
- 2 tablespoons honey
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Combine olive oil, minced garlic, dried herbs, salt, and pepper in a mixing bowl.
- Rub the mixture onto the chicken breasts.
- Place them in a greased baking dish.
- Bake for 25-30 minutes or until it reaches an internal temperature of 165°F (74°C).
- Boil the peeled and cubed potatoes in salted water until fork-tender, then mash with milk and butter.
- Glaze the sliced carrots with honey over medium heat until tender and slightly caramelized.
- Serve the chicken with creamy mashed potatoes and glazed carrots, garnished with parsley.
Notes
For a spicy twist, add red pepper flakes to the garlic herb mixture. Leftovers can be stored in the refrigerator for up to 3 days.
