Ingredients

  • 4 chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (thyme, rosemary, or oregano)
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 4 carrots, sliced
  • 2 tablespoons honey
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine olive oil, minced garlic, dried herbs, salt, and pepper in a mixing bowl.
  3. Rub the mixture onto the chicken breasts.
  4. Place them in a greased baking dish.
  5. Bake for 25-30 minutes or until it reaches an internal temperature of 165°F (74°C).
  6. Boil the peeled and cubed potatoes in salted water until fork-tender, then mash with milk and butter.
  7. Glaze the sliced carrots with honey over medium heat until tender and slightly caramelized.
  8. Serve the chicken with creamy mashed potatoes and glazed carrots, garnished with parsley.

Notes

For a spicy twist, add red pepper flakes to the garlic herb mixture. Leftovers can be stored in the refrigerator for up to 3 days.
