- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning

- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil

Instructions
- Prepare the Potatoes: Wash the baby potatoes and halve them.
- Season the Chicken: Rub chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using).
- Place Ingredients in Crockpot: Layer halved potatoes in the bottom of the crockpot, then place seasoned chicken on top.
- Add Chicken Broth: Pour chicken broth over the chicken and potatoes.
- Add Garlic and Cheese: Sprinkle minced garlic over the chicken, then add grated parmesan cheese.
- Cook the Mixture: Cover crockpot and cook on low for 6–7 hours or high for 3–4 hours.
- Check Temperature: Ensure chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
- Serve and Enjoy: Remove chicken and potatoes from crockpot and spoon sauce over the top.
- Garnish: Sprinkle with fresh parsley before serving.
Notes
For extra flavor, serve with steamed vegetables or salad, and consider adding more garlic if desired.
