- 8 oz chickpea pasta
- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Start by cooking the chickpea pasta according to the package instructions. Once it’s perfectly al dente, drain the pasta and set it aside.
- In a large skillet, heat the olive oil over medium heat. Allow it to warm up so that it can give your chicken that golden-brown color we all love.
- Add the diced chicken to the skillet and season it with a little salt and pepper. Cook the chicken until it’s browned and cooked through, which should take about 5-7 minutes.
- Now, add the minced garlic to the skillet and sauté for 1 minute. The smell will be incredible!
- Stir in the cooked pasta and grated Parmesan cheese until everything is well combined. You want every bit of pasta to be coated in that cheesy goodness.
- Finally, garnish with chopped parsley and serve warm. Get ready for compliments!
