- 8 tablespoons salted butter, divided
- 24 oz boneless skinless chicken breasts, cubed
- 1 ½ teaspoons fine sea salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ tablespoon minced garlic
- 8 oz rotini pasta
- 4 bulbs roasted garlic
- ¾ cup chicken broth
- 4 oz Parmesan cheese, grated
- ½ cup heavy cream
- 1 tablespoon dried parsley (optional)
- 8 oz fresh spinach (optional)
Instructions
- Start by melting 4 tablespoons of the butter in your pressure cooker. Add the cubed chicken along with sea salt, onion powder, garlic powder, and black pepper. Sauté everything until the chicken turns lightly brown.
- Next, add the minced garlic. Cook it for about a minute until you can smell that delicious aroma wafting through your kitchen.
- Now, it’s time to add the rotini pasta to the pot. Toss in roasted garlic, and don’t forget the remaining butter, along with the chicken broth. Make sure to scrape the bottom of the pot to release any delicious brown bits.
- Lock the lid on the pressure cooker and set it to cook on high for 4 minutes. Once it finishes, let the pressure release naturally for 10 minutes.
- After the natural release, carefully open the lid, and stir in the Parmesan cheese and heavy cream until the sauce becomes creamy. If you like, fold in the fresh spinach and parsley for added flavor and color.
Notes
Serve with a fresh green salad or garlic bread. For extra flavor, sprinkle more Parmesan or add red pepper flakes.
