- 2 pounds boneless, skinless chicken breast, cut into thin cutlets
- 1/3 cup Italian style bread crumbs
- 1/4 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 2 tablespoons olive oil, plus more as needed
- 16 ounces penne pasta, uncooked
- 6 tablespoons butter
- 4 cloves garlic, pressed
- 2 tablespoons flour
- 2 cups heavy cream
- 1 cup chicken broth
- 1/4 cup grated parmesan
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Chopped parsley for garnish
Instructions
- Cook the pasta: Boil water in a large pot and add a pinch of salt. Cook the penne pasta according to the package instructions until it’s al dente. Once done, drain and set aside.
- Prepare the Garlic Parmesan Chicken: In a shallow dish, mix the bread crumbs, 1/4 cup of grated parmesan, garlic powder, and 1/2 teaspoon of salt. Dip each chicken cutlet in the mixture, ensuring both sides are well-coated. Heat olive oil in a skillet over medium heat. Cook the chicken for about 4-5 minutes on each side until it reaches a golden-brown color and is cooked through. Remove from the skillet and cover to keep warm.
- Make the Garlic Cream Sauce: In the same skillet, reduce the heat and melt the butter. Add the pressed garlic and sauté until fragrant, about 1 minute. Sprinkle the flour and stir constantly for about 2 minutes to form a roux. Slowly add the heavy cream and chicken broth while whisking continuously to avoid lumps. Bring the sauce to a gentle simmer and let it thicken. Add the remaining 1/4 cup of grated parmesan, salt, and pepper. Stir until well-combined.
- Combine everything: Add the cooked pasta to the skillet with the garlic cream sauce, tossing to coat all the pasta in the delicious sauce. Slice the Chicken and place it on top of the pasta.
- Garnish and serve: Sprinkle with freshly chopped parsley for color and added flavor.
Notes
For a spicy twist, add red pepper flakes to the sauce. This dish pairs well with a garden salad or garlic bread.
