  • ½ cup breadcrumbs (or almond flour for gluten-free)
  • 2 eggs
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • ½ cup milk
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • Optional glaze: garlic butter or marinara sauce

Instructions

  1. Prepare Mixture: In a large bowl, combine the ground meat, breadcrumbs, eggs, minced garlic, grated Parmesan cheese, milk, chopped parsley, dried oregano, salt, and pepper. Mix everything gently until it’s just combined; overmixing can make the meatloaf tough.
  2. Shape Loaf: Transfer the mixture to a parchment-lined loaf pan. If you prefer a freeform loaf, shape it with your hands on a baking sheet.
  3. Bake: Preheat your oven to 375°F (190°C) and bake the meatloaf for 45 to 55 minutes, or until the internal temperature reaches 160°F (71°C).
  4. Optional Glaze: If you want to elevate the flavors even more, brush the top with garlic butter or marinara sauce during the last 10 minutes of baking.
  5. Rest & Slice: Once out of the oven, let the meatloaf rest for about 10 minutes. This step is crucial! It allows the juices to redistribute and keeps the meatloaf nice and juicy when you slice it.
