- 2 Chicken breasts
- 2 tbsp Olive oil
- 2 cloves Garlic, minced
- 2 tbsp Lemon juice
- 1 tsp Oregano
- Salt, to taste
- Pepper, to taste
- 1 Cucumber, chopped
- 2 Tomatoes, chopped
- 1 Red onion, chopped
- 1/2 cup Feta cheese, crumbled
- 1/2 cup Greek yogurt
- 1 cup Quinoa or rice
Instructions
- Marinate the chicken breasts. In a bowl, combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Add the chicken breasts to this marinade and let them soak for at least 30 minutes.
- Cook the chicken. Heat a grill or skillet over medium heat. Remove the chicken from the marinade and grill or cook it for about 6 to 8 minutes on each side, or until it reaches an internal temperature of 165°F.
- Prepare the quinoa or rice. Follow package instructions to cook your quinoa or rice. Feel free to add a little extra olive oil or lemon juice for flavor.
- Chop your vegetables. While the chicken cooks, chop the cucumber, tomatoes, and red onion.
- Assemble the bowls. Once the chicken is cooked, slice it into strips. Start with a base of quinoa or rice in serving bowls, then add the chopped vegetables. Top everything with sliced chicken, a sprinkle of feta cheese, and a generous drizzle of Greek yogurt.

Notes
For best flavor, allow the chicken to marinate longer. Serve with pita bread or tzatziki sauce for added taste.
