Bright, colorful Greek chicken bowls bursting with flavor, perfect for summer meals and customizable for every taste!


Ingredients

  • 2 Chicken breasts
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 2 tbsp Lemon juice
  • 1 tsp Oregano
  • Salt, to taste
  • Pepper, to taste
  • 1 Cucumber, chopped
  • 2 Tomatoes, chopped
  • 1 Red onion, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 1 cup Quinoa or rice

Instructions

  1. Marinate the chicken breasts. In a bowl, combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Add the chicken breasts to this marinade and let them soak for at least 30 minutes.
  2. Cook the chicken. Heat a grill or skillet over medium heat. Remove the chicken from the marinade and grill or cook it for about 6 to 8 minutes on each side, or until it reaches an internal temperature of 165°F.
  3. Prepare the quinoa or rice. Follow package instructions to cook your quinoa or rice. Feel free to add a little extra olive oil or lemon juice for flavor.
  4. Chop your vegetables. While the chicken cooks, chop the cucumber, tomatoes, and red onion.
  5. Assemble the bowls. Once the chicken is cooked, slice it into strips. Start with a base of quinoa or rice in serving bowls, then add the chopped vegetables. Top everything with sliced chicken, a sprinkle of feta cheese, and a generous drizzle of Greek yogurt.
  6. Serve and enjoy! Dig in and relish the flavors of this Mediterranean-inspired dish!

Notes

For best flavor, allow the chicken to marinate longer. Serve with pita bread or tzatziki sauce for added taste.
