Ingredients

  • 2 chicken breasts
  • 2 cups cooked quinoa
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Mix Greek yogurt, minced garlic, olive oil, lemon juice, salt, and pepper to make the tzatziki sauce.
  2. Season the chicken breasts with salt, pepper, and a drizzle of olive oil.
  3. Grill or pan-sear the chicken until cooked, about 6-7 minutes per side.
  4. Slice the chicken into strips for layering.
  5. Layer quinoa, cucumber, bell pepper, tomatoes, onion, and chicken in meal prep bowls.
  6. Top with tzatziki and garnish with parsley.
