Description

A refreshing and colorful dish combining marinated chicken with vibrant vegetables and tzatziki sauce, perfect for any meal.

Ingredients

Scale
  • 2 chicken breasts
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 small red onion, thinly sliced
  • 1 cup rice or quinoa (your choice)
  • 1 cup yogurt (Greek or plain)
  • 2 tablespoons fresh dill, chopped
  • Extra salt and pepper to taste

Instructions

  1. Marinate the chicken: Start by combining olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. This fragrant mix will transform the chicken into a flavor-packed delight. Add the chicken breasts to this mixture, making sure they’re well-coated. Let them marinate for at least 30 minutes; longer if you have the time!
  2. Grill the chicken: Heat your grill or skillet over medium heat. Once it’s ready, place the marinated chicken on the grill and cook for about 6-7 minutes on each side. You want them golden and cooked through—about 165°F (75°C).
  3. Prepare the tzatziki sauce: While the chicken sizzles, mix the yogurt, grated cucumber, chopped dill, salt, and pepper in a bowl. This creamy and refreshing sauce is perfect for topping off your bowls!
  4. Cook the rice or quinoa: Follow the package instructions for cooking your rice or quinoa. This forms the hearty base of your bowls!
  5. Assemble the bowls: Once everything is ready, grab a bowl. Start with a serving of cooked rice or quinoa, then layer on the sliced grilled chicken, diced tomatoes, chopped cucumber, and red onion. Don’t forget to top it all off generously with your homemade tzatziki sauce.
  6. Serve and enjoy your Greek Chicken Bowls! Sit down and enjoy the vibrant flavors and delicious textures you’ve created!

Notes

Serve with Greek salad and warm pita bread for a complete meal. Leftovers can be stored in an airtight container for up to 3 days.
