1 3/4 cups all-purpose flour

1 tsp baking soda

Brown Sugar Pecan Glaze:

3 tbsp unsalted butter

1/3 cup light brown sugar, packed

2 tbsp heavy cream or milk

1/4 cup chopped pecans

1/4 tsp vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

2. In a large bowl, whisk together mashed bananas, Greek yogurt, melted butter, sugars, eggs, and vanilla until smooth.

3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.

4. Gradually fold the dry ingredients into the wet mixture until just combined.

5. Fold in pecans if using.

6. Pour the batter into the prepared loaf pan and smooth the top.

7. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.

8. Cool in the pan for 10 minutes, then transfer to a wire rack.

9. To make the glaze, melt butter in a small saucepan over medium heat.

10. Add brown sugar and cream; bring to a gentle simmer and cook for 2–3 minutes until slightly thickened.

11. Stir in pecans, vanilla, and salt.

12. Pour the warm glaze over the cooled banana bread and let it set before slicing.

Notes

Use very ripe bananas for the best flavor and sweetness.
