Instructions
- Start by toasting the bread slices in your toaster or skillet until they turn golden and crisp.
- While the bread toasts, grab a small bowl and mash the ripe avocado with the lemon juice, sea salt, black pepper, and chives (if using). Aim for a creamy consistency but leave it slightly chunky for added texture.
- Heat a nonstick skillet over medium heat. Once hot, crack in the eggs and cook them according to your preference. For fried eggs, allow them to cook for about 2-3 minutes for runny yolks or longer for firmer yolks.
- Spread the luscious mashed avocado evenly over the toasted bread slices.
- Top each slice with a cooked egg, then sprinkle with crumbled feta cheese, a pinch of red pepper flakes, and extra black pepper if desired. Serve immediately and enjoy!
