Ingredients

- 1 lb ground beef
- 2 sweet potatoes, diced
- 1 cup cottage cheese
- 1/4 cup hot honey
- 2 tsp taco seasoning
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper in a baking dish. Roast for 25-30 minutes until tender.
- Cook the ground beef in a skillet over medium heat, breaking it apart and adding taco seasoning until browned and cooked through.
- Layer the roasted sweet potatoes, cooked ground beef, and cottage cheese in bowls. Drizzle hot honey over the top.
- Serve warm and enjoy!
Notes
For added flavor, top with fresh cilantro or green onions. Store leftovers in the fridge for up to three days, or freeze for three months.
