- 2 medium sweet potatoes, diced
- 1 cup mixed vegetables (like bell peppers, zucchini, or carrots)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon. Season with paprika, Italian seasoning, salt, and pepper.
- Add diced sweet potatoes and mixed vegetables to the skillet, stirring to combine.
- Transfer the mixture to a baking dish and spread evenly.
- Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until sweet potatoes are tender.
- Garnish with fresh parsley if desired before serving.
Notes
