Ingredients

  • 1 lb boneless skinless chicken thighs or breasts, sliced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ cup crumbled feta cheese
  • ½ cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, minced
  • 12 tablespoons warm water (to thin)
  • Pinch of black pepper
  • 2 cups cooked jasmine or basmati rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup Kalamata olives, sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Start by marinating the chicken. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, smoked paprika, cumin, salt, and black pepper. Add the sliced chicken to the bowl, and toss everything together to ensure the chicken gets well-coated. Let it sit for at least 20 minutes, or refrigerate for up to 4 hours.
  2. Once the chicken is marinated, heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for about 6–8 minutes, stirring occasionally, until it’s fully cooked and slightly charred. Once done, remove from heat.
  3. While the chicken is cooking, whip up the creamy garlic feta sauce. In a blender, combine the crumbled feta, Greek yogurt, olive oil, lemon juice, minced garlic, and a pinch of black pepper. Blend until smooth, adding warm water as needed to reach a drizzle-friendly consistency.
  4. Now it’s assembly time! Divide the cooked rice into serving bowls. Top each bowl with cooked chicken, cherry tomatoes, cucumber, red onion, and Kalamata olives. Drizzle the creamy garlic feta over everything and sprinkle with fresh parsley.
  5. Serve warm and enjoy!
