- 4 chicken thighs
- 1 cup pineapple chunks
- 2 bell peppers, sliced
- 1/4 cup soy sauce

- 1 tablespoon ginger, grated

Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together soy sauce, olive oil, minced garlic, grated ginger, and black pepper in a bowl.
- Marinate the chicken thighs in the soy sauce mixture for at least 20 minutes.
- Place the marinated chicken thighs, pineapple chunks, and sliced bell peppers on a sheet pan.
- Toss everything to coat well and spread out evenly.
- Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through.

Notes
