Ingredients

  • 4 chicken thighs
  • 1 cup pineapple chunks
  • 2 bell peppers, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together soy sauce, olive oil, minced garlic, grated ginger, and black pepper in a bowl.
  3. Marinate the chicken thighs in the soy sauce mixture for at least 20 minutes.
  4. Place the marinated chicken thighs, pineapple chunks, and sliced bell peppers on a sheet pan.
  5. Toss everything to coat well and spread out evenly.
  6. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through.

Notes
