- 1 cup orzo pasta
- 2 cups chicken breast, diced
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chicken broth
- Salt and pepper to taste
- Parmesan cheese, grated (optional)
Instructions
- Start by cooking the orzo according to the package instructions. Once it’s done, drain and set it aside.
- In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté it until it becomes fragrant, which should take about a minute.
- Toss in the diced chicken breast and cook until it turns a beautiful golden brown and is fully cooked through, about 5-7 minutes.
- Stir in the fresh broccoli florets and chicken broth. Cover the pot and cook for about 5-7 minutes more, or until the broccoli is tender and bright green.
- Return the cooked orzo to the pot. Season the mixture with salt and pepper to your liking and give it a good mix to combine all the flavors.
- Serve your Healthy Chicken and Broccoli Orzo warm. If you like, top it with grated Parmesan cheese for an extra layer of flavor.
