- 3 cups shredded cooked chicken (rotisserie or breast)
- 4 cups cauliflower rice (store-bought or homemade)
- 8 oz cream cheese (softened or Greek yogurt for a lighter option)
- 1 cup shredded cheddar cheese (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- Optional: 1 cup chopped spinach (or broccoli florets or sliced mushrooms)
Instructions
- Preheat your oven to 375°F (190°C).
- If you’re using raw chicken, cook and shred it; or use rotisserie chicken.
- If making your own cauliflower rice, pulse fresh cauliflower florets in a food processor until rice-sized; otherwise, use store-bought.
- Heat olive oil in a large skillet over medium heat. Add cauliflower rice and cook for about 5-7 minutes until tender.
- If using optional vegetables, sauté them lightly until just tender, then set aside.
- In a large mixing bowl, combine the shredded chicken, sautéed cauliflower rice, softened cream cheese, half of the shredded cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.
- If using optional vegetables, fold them into the mixture.
- Transfer the mixture to a greased baking dish and spread it out evenly.
- Top with the remaining shredded cheese.
- Bake uncovered for 20-25 minutes until cheese melts and bubbles.
Notes
Pairs well with a crisp green salad or roasted vegetables. Leftovers can be refrigerated for 3-4 days or frozen for up to 2-3 months.
