Ingredients
- Boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- Sweet potatoes, peeled and cubed

- Dried thyme
- Salt
- Black pepper

- Broccoli florets
- Bell peppers

Instructions
- Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper.
- Cut the sweet potatoes into 1-inch cubes and toss them in a bowl with olive oil and half of the seasoning blend.
- Spread the sweet potatoes in a single layer on one baking sheet.
- Cut the chicken into 1-inch pieces, coat them with olive oil and the remaining seasoning blend.
- Roast the sweet potatoes in the oven for 15 minutes.
- Add the seasoned chicken to the second baking sheet along with extra veggies, and return both sheets to the oven.
- Continue roasting for an additional 15-20 minutes until chicken is cooked through and sweet potatoes are tender.
- Divide roasted sweet potatoes and chicken among serving bowls and toss in fresh spinach or kale.
- Drizzle with your choice of dressing and garnish before serving.
