Description

A rich and flavorful vegetable lasagna that layers tender noodles with a variety of vegetables, cheese, and a tasty marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups mixed vegetables (zucchini, spinach, mushrooms)
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions.
  3. In a skillet, heat olive oil and sauté the mixed vegetables until tender.
  4. Mix the ricotta cheese with salt, pepper, and oregano in a bowl.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, then add half of the ricotta mixture, half of the sautéed vegetables, and one-third of the mozzarella.
  7. Repeat layering with another 3 noodles, the remaining ricotta, the other half of the vegetables, and another layer of marinara.
  8. Top with the final 3 noodles, remaining marinara sauce, mozzarella, and Parmesan cheese.
  9. Bake for 30-35 minutes until the cheese is bubbly and golden.
  10. Let it cool for 10 minutes before serving.
