A rich and flavorful vegetable lasagna that layers tender noodles with a variety of vegetables, cheese, and a tasty marinara sauce.

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups mixed vegetables (zucchini, spinach, mushrooms)
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions.
- In a skillet, heat olive oil and sauté the mixed vegetables until tender.
- Mix the ricotta cheese with salt, pepper, and oregano in a bowl.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, then add half of the ricotta mixture, half of the sautéed vegetables, and one-third of the mozzarella.
- Repeat layering with another 3 noodles, the remaining ricotta, the other half of the vegetables, and another layer of marinara.
- Top with the final 3 noodles, remaining marinara sauce, mozzarella, and Parmesan cheese.
- Bake for 30-35 minutes until the cheese is bubbly and golden.
- Let it cool for 10 minutes before serving.
