Description

A delicious layered vegetable lasagna packed with flavor and goodness.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Boil lasagna noodles according to package instructions; drain.
  2. Preheat the oven to 375°F (190°C).
  3. Mix ricotta cheese, spinach, zucchini, bell pepper, and Italian seasoning in a bowl; season with salt and pepper.
  4. Spread a layer of marinara sauce in the bottom of a baking dish.
  5. Layer 4 noodles, half of the ricotta mixture, 1 cup of marinara sauce, and 1 cup of mozzarella cheese.
  6. Repeat the layers, ending with noodles, marinara sauce, and remaining mozzarella and Parmesan cheese on top.
  7. Bake in the preheated oven for 35-40 minutes until bubbly and golden.
  8. Let it sit for 10 minutes before slicing and serving.

Notes

For extra flavor, add fresh basil or oregano.
