Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 8 ounces whole wheat or chickpea pasta
  • 4 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • ⅓ cup Greek yogurt
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil. Toss in the pasta and cook until al dente, about 8-10 minutes. Drain the pasta, saving ½ cup of pasta water.
  2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper and cook each side for 4-5 minutes until golden brown. Remove and let rest before slicing.
  3. Sauté the Garlic: In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant.
  4. Prepare the Sauce: Pour in the chicken broth and simmer for 2-3 minutes, scraping browned bits from the pan.
  5. Combine Ingredients: Lower the heat to medium-low. Stir in Greek yogurt and Parmesan until smooth. Add sliced chicken and pasta, adjusting consistency with reserved pasta water as needed. Season with salt and pepper.
  6. Finish and Serve: Mix everything together, sprinkle with chopped parsley, and serve immediately.

Notes

Consider adding vegetables or different proteins for variations. Serve with a fresh salad or bread.
