- 1 pound boneless, skinless chicken breasts
- 8 ounces whole wheat or chickpea pasta
- 4 garlic cloves, minced
- ½ cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tablespoons olive oil
- ⅓ cup Greek yogurt
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Boil the Pasta: Bring a large pot of salted water to a boil. Toss in the pasta and cook until al dente, about 8-10 minutes. Drain the pasta, saving ½ cup of pasta water.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper and cook each side for 4-5 minutes until golden brown. Remove and let rest before slicing.
- Sauté the Garlic: In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant.
- Prepare the Sauce: Pour in the chicken broth and simmer for 2-3 minutes, scraping browned bits from the pan.
- Combine Ingredients: Lower the heat to medium-low. Stir in Greek yogurt and Parmesan until smooth. Add sliced chicken and pasta, adjusting consistency with reserved pasta water as needed. Season with salt and pepper.
- Finish and Serve: Mix everything together, sprinkle with chopped parsley, and serve immediately.

Consider adding vegetables or different proteins for variations. Serve with a fresh salad or bread.
