Description

Delicious and moist banana muffins made with Greek yogurt, perfect for breakfast or snacks.


Ingredients

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mash the ripe bananas in a bowl.
  3. Mix in the Greek yogurt, honey, egg, and vanilla extract until smooth.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Combine the wet and dry ingredients by folding them together.
  6. Fold in optional chocolate chips or nuts if desired.
  7. Fill muffin cups about three-quarters full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.

Notes
