- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a pan over medium heat and sauté the zucchini and bell pepper until tender.
- Add chopped spinach and cook until wilted.
- Layer the bottom of a baking dish with marinara sauce.
- Spread a layer of noodles over the sauce.
- Combine the sautéed vegetables with ricotta cheese, salt, and pepper, then spread over the noodles.
- Add another layer of marinara and noodles, repeat the layers.
- Top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 35-40 minutes until bubbly and golden.
Notes
Let the lasagna sit for 10 minutes before serving for easier slicing.
