Ingredients

- 2 cups cooked shredded chicken
- 1 can white beans (such as cannellini or great northern)
- 1 can diced green chiles
- 1 cup chicken broth
- 1 cup corn (frozen or canned)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup Greek yogurt or sour cream
- Chopped cilantro for garnish
Instructions
- Sauté the diced onion and minced garlic until softened.
- Add the shredded chicken, white beans, diced green chiles, corn, chicken broth, cumin, chili powder, salt, and pepper to the pot. Stir to combine.
- Let the mixture simmer for about 20 minutes on the stovetop, or cook it on high pressure for about 10 minutes in an Instant Pot.
- Stir in the Greek yogurt or sour cream until creamy and smooth.
- Serve hot, garnished with chopped cilantro.
